Air Fryer Salmon & Crispy Potatoes (5-Ingredient Weeknight Dinner)
Quick, wholesome, and bursting with flavor — this easy air fryer salmon with crispy potatoes is made with just 5 ingredients and ready in under 30 minutes. A perfect one-basket dinner for busy weeknights or light summer evenings.
🛒 Ingredients (Serves 2)
- 2 salmon fillets (about 150–200g each)
- 2 medium waxy potatoes, thinly sliced
- 1 handful of asparagus or green beans (optional)
- 1 lemon (zest and juice)
- 1 tbsp olive oil
- Salt & pepper, to taste
👩🍳 Instructions
- Preheat the air fryer to 200°C (390°F).
- Prepare the potatoes:
Toss the thinly sliced potatoes with olive oil, salt, and pepper. Place them in the air fryer basket in a single layer and cook for 10–12 minutes, shaking halfway through. - Season the salmon:
While the potatoes cook, rub the salmon fillets with olive oil, lemon zest, salt, and pepper. - Add salmon & greens:
Once the potatoes start to crisp, place the salmon on top. Add the asparagus or green beans around it, if using. - Air fry everything:
Cook for another 10–12 minutes, or until the salmon flakes easily with a fork and the potatoes are golden and crisp. - Serve:
Finish with a squeeze of fresh lemon juice and serve warm.
