Quick, wholesome, and bursting with flavor — this easy air fryer salmon with crispy potatoes is made with just 5 ingredients and ready in under 30 minutes. A perfect one-basket dinner for busy weeknights or light summer evenings.

🛒 Ingredients (Serves 2)

  • 2 salmon fillets (about 150–200g each)
  • 2 medium waxy potatoes, thinly sliced
  • 1 handful of asparagus or green beans (optional)
  • 1 lemon (zest and juice)
  • 1 tbsp olive oil
  • Salt & pepper, to taste

👩‍🍳 Instructions

  1. Preheat the air fryer to 200°C (390°F).
  2. Prepare the potatoes:
    Toss the thinly sliced potatoes with olive oil, salt, and pepper. Place them in the air fryer basket in a single layer and cook for 10–12 minutes, shaking halfway through.
  3. Season the salmon:
    While the potatoes cook, rub the salmon fillets with olive oil, lemon zest, salt, and pepper.
  4. Add salmon & greens:
    Once the potatoes start to crisp, place the salmon on top. Add the asparagus or green beans around it, if using.
  5. Air fry everything:
    Cook for another 10–12 minutes, or until the salmon flakes easily with a fork and the potatoes are golden and crisp.
  6. Serve:
    Finish with a squeeze of fresh lemon juice and serve warm.

  • Ultra-crispy tip: Use a mandoline to slice the potatoes paper-thin.
  • Veggie swaps: Try zucchini, snap peas, or small broccoli florets.

Leftovers can be stored in an airtight container in the fridge for up to 2 days. Reheat in the air fryer at 180°C for 5–6 minutes for best texture.
