How to Make

Step 1: Prepare the Crabmeat

If using fresh crabmeat, pick through it to remove any bits of shell. If using canned or pre-cooked crabmeat, drain and set aside.

In a small bowl, gently combine the crabmeat with the green onions. Set aside for later.

Step 2: Make the Omelet Mixture

In a medium bowl, whisk together the eggs and heavy cream (or milk). Season with salt and pepper. Whisk until the mixture is light and well combined.

If desired, add a tablespoon of water to make the omelet fluffier.

Evenly distribute the crabmeat mixture over one half of the omelet. If using cheese, sprinkle it over the crabmeat at this point.

Using a spatula, carefully fold the other half of the omelet over the crabmeat, forming a half-moon shape.

Cook for an additional 1–2 minutes, allowing the cheese to melt and the omelet to finish cooking.

Step 5: Serve and Garnish

Slide the omelet onto a plate and garnish with fresh parsley, a squeeze of lemon, and a dash of hot sauce if desired.

Serve immediately with a side salad or some crusty bread for a complete meal.

Chef’s Note

For a more decadent version, add a dollop of sour cream or crème fraîche on top of the omelet when serving.
