Ingredients
For the Crab Meat and Noodles:
1 pound fresh crab meat (or cooked crab, picked over)
8 oz egg noodles or any noodles of your choice
2 tablespoons vegetable oil
3 cloves garlic, minced
1-inch piece fresh ginger, grated
1 tablespoon soy sauce
1 tablespoon oyster sauce
1 teaspoon rice vinegar
1 teaspoon sesame oil
1/2 teaspoon chili flakes (optional for heat)
1/4 cup green onions, chopped (for garnish)
1 tablespoon fresh cilantro, chopped (for garnish)
1/4 cup toasted sesame seeds (optional)
For the Broth and Sauce:
2 cups chicken or vegetable broth
1 tablespoon soy sauce
1 tablespoon hoisin sauce
1/2 tablespoon sugar
1 teaspoon fish sauce (optional, for deeper umami flavor)
1 tablespoon lime juice
How to Make
Step 1: Cook the Noodles
Bring a large pot of salted water to a boil and cook the noodles according to the package instructions.
Once cooked, drain the noodles and set them aside. Drizzle a small amount of sesame oil over the noodles to prevent them from sticking together.
Step 2: Prepare the Sauce

In a medium saucepan, combine the chicken or vegetable broth, soy sauce, hoisin sauce, sugar, and fish sauce (if using). Bring the mixture to a simmer over medium heat, stirring occasionally.
Once the sauce has simmered for 5-7 minutes and slightly reduced, add the lime juice and remove from heat. Set aside.
Step 3: Cook the Crab and Aromatics
In a large skillet or wok, heat the vegetable oil over medium-high heat.
Add the garlic and grated ginger to the skillet and sauté for about 1-2 minutes, until fragrant and golden.
Add the crab meat to the skillet and toss gently to combine, cooking for about 2-3 minutes until heated through. Be careful not to break up the crab meat too much.
Step 4: Combine the Noodles, Sauce, and Crab
Add the cooked noodles to the skillet with the crab.
Pour the prepared broth sauce over the noodles and crab mixture. Toss gently to coat the noodles and crab evenly with the sauce.
Stir in the soy sauce, oyster sauce, rice vinegar, and chili flakes (if using) for added flavor and a touch of spice.
Step 5: Garnish and Serve
Once everything is well combined and heated through, transfer the Crab Noodles to serving bowls.
Garnish with chopped green onions, fresh cilantro, and toasted sesame seeds.
Serve immediately with extra lime wedges for a refreshing burst of citrus.
Chef’s Note
For the freshest flavor, use fresh crab meat whenever possible. If fresh crab is not available, canned crab meat or frozen crab can be used as an alternative. Just be sure to drain and pick through it carefully for any shell fragments.
If you want to add more vegetables, feel free to include thinly sliced bell peppers, baby spinach, or mushrooms to the noodles for extra texture and color.
If you prefer a spicier dish, increase the amount of chili flakes or add a dash of chili oil.
For a more indulgent touch, you can drizzle a little more sesame oil over the finished dish before serving for extra richness.
This recipe is versatile, so you can swap the noodles for rice noodles or even udon noodles for a different texture.
