Crabmeat Omelet
A Crabmeat Omelet is a luxurious and flavorful dish that transforms a simple omelet into a gourmet experience. The delicate sweetness of the crab meat pairs beautifully with the fluffy eggs, creating a light and satisfying meal.
Whether you’re enjoying it for breakfast, brunch, or dinner, this recipe will impress with its rich taste and elegant presentation. With a few fresh ingredients and minimal effort, you can indulge in the perfect combination of savory and seafood goodness.
Ingredients
For the Omelet:
4 large eggs
1/4 cup heavy cream or milk
1 tablespoon butter
1/2 cup fresh crabmeat, picked over for shells
1/4 cup finely chopped green onions
1/4 cup shredded cheddar cheese (optional)
Salt and black pepper to taste
For Garnish (optional):
Fresh parsley, chopped
Lemon wedges
Hot sauce (optional)
How to Make
Step 1: Prepare the Crabmeat
If using fresh crabmeat, pick through it to remove any bits of shell. If using canned or pre-cooked crabmeat, drain and set aside.
In a small bowl, gently combine the crabmeat with the green onions. Set aside for later.
Step 2: Make the Omelet Mixture
In a medium bowl, whisk together the eggs and heavy cream (or milk). Season with salt and pepper. Whisk until the mixture is light and well combined.
If desired, add a tablespoon of water to make the omelet fluffier.
Step 3: Cook the Omelet

Heat a non-stick skillet over medium heat and add the butter. Let it melt and coat the bottom of the pan.
Pour the egg mixture into the pan, swirling it gently to cover the bottom. Let it cook undisturbed for about 1-2 minutes, or until the edges start to set.
Once the edges are set, carefully lift them with a spatula and tilt the pan to allow any uncooked egg to flow to the edges. Let it cook for another 1–2 minutes until the omelet is mostly set but slightly runny on top.
Step 4: Add the Crabmeat Filling
Evenly distribute the crabmeat mixture over one half of the omelet. If using cheese, sprinkle it over the crabmeat at this point.
Using a spatula, carefully fold the other half of the omelet over the crabmeat, forming a half-moon shape.
Cook for an additional 1–2 minutes, allowing the cheese to melt and the omelet to finish cooking.
Step 5: Serve and Garnish
Slide the omelet onto a plate and garnish with fresh parsley, a squeeze of lemon, and a dash of hot sauce if desired.
Serve immediately with a side salad or some crusty bread for a complete meal.
Chef’s Note
For a more decadent version, add a dollop of sour cream or crème fraîche on top of the omelet when serving.
You can experiment with other fillings like sautéed spinach, mushrooms, or roasted bell peppers to complement the crabmeat.
Be sure to cook the omelet on medium heat to avoid overcooking the eggs and drying them out. If you prefer a well-done omelet, you can cook it for a little longer, but avoid making it too dry.
