Ingredients

For the Lobster Filling:

1 pound cooked lobster meat, chopped into small pieces

2 tablespoons unsalted butter

1/4 cup red bell pepper, finely diced

1/4 cup onion, finely diced

2 cloves garlic, minced

1 tablespoon fresh cilantro, chopped

1 tablespoon fresh lime juice

Salt and pepper, to taste

For the Quesadilla:

4 large flour tortillas

1 1/2 cups shredded Mexican cheese blend (cheddar, Monterey Jack, or a mix)

1 tablespoon olive oil (for grilling)

For the Dipping Sauce (Optional):

1/2 cup sour cream

2 tablespoons mayonnaise

1 tablespoon fresh lime juice

1 teaspoon hot sauce (optional)

Salt and pepper, to taste

How to Make

Step 1: Prepare the Lobster Filling

Heat 2 tablespoons of butter in a skillet over medium heat.

Add the diced red bell pepper, onion, and minced garlic. Sauté for 3-4 minutes until the vegetables soften and become fragrant.

Add the chopped lobster meat to the skillet and cook for an additional 2-3 minutes, allowing the lobster to warm through.

Stir in the fresh cilantro and lime juice. Season the filling with salt and pepper to taste. Set the lobster filling aside to cool slightly while you prepare the tortillas.

Step 2: Assemble the Quesadillas

Lay a tortilla flat on a clean surface.

Sprinkle a generous amount of shredded cheese on half of the tortilla.

Spoon some of the lobster filling over the cheese, making sure it’s evenly spread.

Fold the tortilla in half, pressing down lightly to secure the filling inside.

Repeat the process for the remaining tortillas, creating four quesadillas in total.

Step 3: Grill the Quesadillas

Heat a tablespoon of olive oil in a large skillet or griddle over medium heat.

Place the quesadilla in the skillet and cook for 3-4 minutes per side, or until the tortilla is golden brown and crispy, and the cheese has melted inside. You can use a spatula to press down slightly on the quesadilla for even grilling.

Once the quesadillas are golden and crispy on both sides, remove them from the skillet and place them on a cutting board. Let them rest for a minute before slicing them into wedges.

Step 4: Make the Dipping Sauce (Optional)

In a small bowl, combine sour cream, mayonnaise, lime juice, and hot sauce (if using). Stir until smooth and season with salt and pepper.

Serve the quesadillas with the dipping sauce on the side for a tangy, creamy accompaniment.

Chef’s Note

Lobster Meat: You can use fresh lobster meat or pre-cooked lobster. If using frozen lobster, ensure it’s thoroughly thawed and drained of any excess moisture before chopping.

Cheese Options: Feel free to experiment with different cheeses. A blend of Monterey Jack and sharp cheddar works well, but you can also use gouda or queso blanco for a unique twist.

Spices: Add a pinch of chili flakes or smoked paprika to the lobster filling for extra heat and flavor.

Make it Spicy: If you enjoy a spicy kick, add diced jalapeños to the lobster filling or increase the amount of hot sauce in the dipping sauce.

Grilling Tip: For an extra crispy tortilla, you can brush the tortillas with a little bit of melted butter before grilling them in the skillet. This will add richness and a beautiful golden color.
