Ingredients

For the Potatoes:

4 large russet potatoes

1 tablespoon olive oil

1/2 teaspoon salt

For the Filling:

1/2 pound cooked lobster meat, chopped

1/2 cup sour cream

1/4 cup unsalted butter, melted

1/2 cup shredded cheddar cheese

1/4 cup grated Parmesan cheese

2 green onions, thinly sliced (plus extra for garnish)

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and black pepper to taste

Fresh parsley, chopped

How to Make

Step 1: Bake the Potatoes

Preheat your oven to 400°F (200°C). Wash and scrub the potatoes, then pat them dry.

Rub each potato with olive oil and sprinkle with salt. Pierce them with a fork to allow steam to escape.

Place the potatoes directly on the oven rack and bake for 50–60 minutes, or until tender when pierced with a knife.

Step 2: Prepare the Filling

Once the potatoes are cool enough to handle, slice them lengthwise and carefully scoop out the insides, leaving a thin shell. Place the scooped-out potato in a large bowl.

Mash the potato insides with sour cream, melted butter, cheddar cheese, Parmesan cheese, garlic powder, smoked paprika, salt, and pepper. Mix until smooth and creamy.

Gently fold in the chopped lobster meat and green onions, reserving a few pieces of lobster for garnish.

Step 3: Stuff and Bake

Spoon the lobster-potato mixture back into the potato shells, mounding it slightly.

Place the stuffed potatoes on a baking sheet and bake in the oven at 375°F (190°C) for 15–20 minutes, or until heated through and slightly golden on top.

Step 4: Serve and Garnish

Remove the potatoes from the oven and garnish with the reserved lobster pieces, additional green onions, and fresh parsley.

Serve immediately with lemon wedges on the side for a fresh, zesty finish.

Chef’s Note

For an extra crispy top, sprinkle a little more shredded cheddar cheese on top before the final bake.

Use freshly steamed lobster tails for the best flavor, or substitute with pre-cooked lobster meat if needed.

Add a pinch of cayenne pepper for a subtle spicy kick.
