Ingredients

  • 1 lb (450g) medium shrimp, peeled, deveined, and chopped into bite-sized pieces
  • 1 cup freshly squeezed lime juice (about 6-8 limes)
  • 1/2 cup freshly squeezed lemon juice (about 2-3 lemons)
  • 1 small red onion, finely chopped
  • 1-2 tomatoes, seeded and diced
  • 1 cucumber, peeled, seeded, and diced
  • 1 jalapeño or serrano pepper, seeded and finely chopped (optional, for heat)
  • 1/2 cup chopped fresh cilantro
  • 1 avocado, diced
  • Salt and freshly ground black pepper to taste
  • Tortilla chips or tostadas, for serving

How to Make Shrimp Ceviche

    Prepare the Shrimp:

In a large bowl, combine chopped shrimp with lime juice and lemon juice. Ensure all shrimp pieces are submerged in the citrus juices. Cover and refrigerate for 30-60 minutes, or until shrimp turns opaque and pink.

    Marinate the Shrimp:

Stir occasionally to ensure even marination. The acidity of the citrus juices “cooks” the shrimp by denaturing the proteins, similar to traditional cooking methods.

    Prepare Vegetables:

In the meantime, prepare the vegetables. Finely chop red onion, dice tomatoes, peel and dice cucumber, and finely chop jalapeño or serrano pepper if using. Chop fresh cilantro and dice avocado.

    Combine Ingredients:

Drain excess citrus juice from the marinated shrimp. Add chopped red onion, diced tomatoes, diced cucumber, chopped cilantro, and jalapeño or serrano pepper (if using) to the shrimp. Gently mix to combine.

    Season and Chill:

Season shrimp ceviche with salt and freshly ground black pepper to taste. Cover and refrigerate for an additional 15-30 minutes to allow flavors to meld together.

    Serve:

Just before serving, gently fold in diced avocado. Serve shrimp ceviche chilled, either in a bowl as an appetizer or on tostadas or tortilla chips for a light meal.

Chef’s Note

For best results, use fresh shrimp that has been properly cleaned and deveined. Adjust the amount of citrus juice and marination time based on your preference for the level of “cook” on the shrimp. You can customize the heat level by adding more or less jalapeño or serrano pepper. Serve shrimp ceviche immediately after adding avocado to prevent it from browning.
