Ingredients:

For the Pizza Dough:

1 1/2 cups all-purpose flour

1 tsp active dry yeast

1/2 tsp salt

1 tsp sugar

1 tbsp olive oil

1/2 cup warm water (110°F)

1/2 tsp garlic powder (optional)

For the Shrimp Topping:

1/2 lb shrimp, peeled, deveined, and tails removed

2 tbsp olive oil

2 cloves garlic, minced

1 tbsp lemon juice

1/2 tsp crushed red pepper flakes (optional)

Salt and black pepper, to taste

For the Pizza:

1/2 cup pizza sauce (use a white garlic sauce or tomato sauce, based on preference)

1 1/2 cups shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1/4 cup red onion, thinly sliced

Seafood Enchiladas

Salmon Wellington

1 tbsp fresh basil or parsley, chopped (for garnish)

Olive oil, for brushing

How to Make:

Prepare the Pizza Dough: In a large bowl, combine the flour, yeast, salt, and sugar. Add the warm water and olive oil to the dry ingredients, stirring until the dough begins to come together. If you like a hint of garlic flavor, you can also add garlic powder to the dough. Knead the dough on a lightly floured surface for about 5-7 minutes until it becomes smooth and elastic. Place the dough in a greased bowl, cover with a damp kitchen towel, and let it rise in a warm place for about 1-1.5 hours, or until it doubles in size.

Prepare the Shrimp: While the dough is rising, heat the olive oil in a skillet over medium heat. Add the minced garlic and cook for about 1 minute until fragrant. Add the shrimp, lemon juice, crushed red pepper flakes (if using), salt, and pepper. Cook the shrimp for about 2-3 minutes on each side, or until they are pink and opaque. Remove the shrimp from the heat and set them aside to cool slightly. Once cool, chop the shrimp into bite-sized pieces.

Preheat the Oven: Preheat your oven to 475°F (245°C) and place a pizza stone or baking sheet inside to heat up.

Shape the Pizza Dough: Once the dough has risen, punch it down and transfer it to a floured surface. Roll the dough out into a 12-inch circle or your desired shape. If you’re using a pizza stone, transfer the dough onto a pizza peel or another floured surface. If you’re using a baking sheet, you can directly place the dough on the sheet.

Assemble the Pizza: Brush the dough with a thin layer of olive oil to ensure a crispy crust. Spread the pizza sauce evenly over the base. If you’re using a white garlic sauce, it will add a creamy base that pairs well with the shrimp. Sprinkle the shredded mozzarella cheese over the sauce, and then evenly distribute the chopped shrimp over the pizza. Top with grated Parmesan cheese and thin slices of red onion for a touch of sweetness and crunch.

Bake the Pizza: Transfer the assembled pizza to the preheated pizza stone or baking sheet. Bake for 10-12 minutes, or until the crust is golden and the cheese is melted and bubbly. If you like your pizza extra crispy, you can add a couple more minutes to the baking time.

Finish and Serve: Remove the pizza from the oven and allow it to cool for a minute. Garnish with freshly chopped basil or parsley, and serve with lemon wedges on the side for an extra burst of flavor. Slice and enjoy!

Chef’s Note:

For added flavor, you can sprinkle a little bit of garlic powder or Italian seasoning over the cheese before baking the pizza. If you prefer a spicier kick, try adding a drizzle of sriracha or hot sauce after baking. You can also experiment with different cheeses such as feta or goat cheese for a tangier taste. For a healthier version, try using a whole wheat crust or a gluten-free pizza crust.

The shrimp can be seasoned with other spices such as paprika, oregano, or thyme to tailor the flavor to your liking. If you have leftover cooked shrimp, this pizza is a great way to repurpose them into a delicious meal.
