Ingredients: (Serves 4)

  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1/4 teaspoon red pepper flakes (adjust to taste)
  • 1/2 cup dry white wine (such as Sauvignon Blanc or Pinot Grigio)
  • 1/4 cup freshly squeezed lemon juice
  • Zest of 1 lemon
  • Salt and black pepper to taste
  • 1/4 cup chopped fresh parsley
  • Cooked pasta or crusty bread for serving
  • Grated Parmesan cheese for garnish (optional)

How to Make Shrimp Scampi:

  1. Prepare the Shrimp:

Ensure the shrimp are peeled, deveined, and patted dry with paper towels. Season lightly with salt and black pepper.

  1. Cook the Shrimp:

In a large skillet, heat 2 tablespoons of butter and 1 tablespoon of olive oil over medium-high heat until the butter is melted and foamy.

Add the shrimp to the skillet in a single layer, making sure not to overcrowd. Cook for 1-2 minutes per side until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.

  1. Make the Garlic Butter Sauce:

In the same skillet, add the remaining 2 tablespoons of butter and 1 tablespoon of olive oil. Lower the heat to medium.

Add the minced garlic and red pepper flakes. Sauté for about 1 minute, stirring constantly, until the garlic is fragrant and just beginning to turn golden.

  1. Deglaze the Pan:

Pour in the white wine and lemon juice, scraping the bottom of the skillet with a wooden spoon to loosen any browned bits (fond). Let the mixture simmer for 2-3 minutes to reduce slightly.

  1. Finish the Dish:

Return the cooked shrimp to the skillet. Add the lemon zest and chopped parsley. Stir gently to coat the shrimp evenly with the sauce. Cook for another 1-2 minutes until the shrimp are heated through.

  1. Serve:

Remove the skillet from heat. Taste and adjust seasoning with salt and pepper if needed.

Serve the Shrimp Scampi immediately over cooked pasta or with crusty bread. Garnish with additional chopped parsley and grated Parmesan cheese if desired.

Chef’s Note:

For an extra touch of richness, you can add a splash of heavy cream to the sauce just before adding the shrimp back to the skillet.

To make this dish more substantial, you can toss the cooked pasta directly into the skillet with the shrimp and sauce, allowing it to absorb the flavors before serving.
