Shrimp Scampi Risotto

Shrimp Scampi Risotto is a luxurious dish that combines the creamy texture of risotto with the vibrant, garlicky flavors of shrimp scampi.

Perfect for special occasions or a comforting dinner, this recipe is a blend of Italian elegance and hearty seafood goodness. The key to its deliciousness lies in slowly simmering the rice while infusing it with white wine, garlic, and butter—a culinary delight that’s worth every minute of preparation.

Ingredients

For the Shrimp Scampi:

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

3 cloves garlic, minced

1/4 teaspoon red pepper flakes (optional)

1/4 cup dry white wine

2 tablespoons fresh lemon juice

3 tablespoons unsalted butter

Salt and black pepper to taste

2 tablespoons fresh parsley, chopped

For the Risotto:

1 cup Arborio rice

3 tablespoons unsalted butter

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup dry white wine

4 cups chicken or seafood stock, warmed

1/4 cup grated Parmesan cheese

Salt and black pepper to taste

How to Make

Step 1: Prepare the Shrimp Scampi

Heat olive oil in a large skillet over medium heat. Add the garlic and red pepper flakes, cooking until fragrant, about 1 minute.

Add the shrimp and cook for 2–3 minutes per side, until pink and opaque.

Pour in the white wine and lemon juice, letting it simmer for 2 minutes.

Stir in the butter and parsley, season with salt and pepper, and remove from heat. Set aside, keeping it warm.

Step 2: Start the Risotto

In a large saucepan, melt butter over medium heat. Add the onion and cook until soft and translucent, about 5 minutes.

Stir in the garlic and Arborio rice, cooking for 1–2 minutes until the rice is lightly toasted.

Pour in the white wine, stirring constantly until absorbed.

Step 3: Cook the Risotto

Gradually add the warm stock, one ladle at a time, stirring constantly. Allow the liquid to absorb before adding the next ladle.

Continue this process for 18–20 minutes, or until the rice is creamy and tender with a slight bite (al dente).

Step 4: Combine and Serve

Stir the Parmesan cheese into the risotto and season with salt and black pepper to taste.

Gently fold in the shrimp scampi, reserving some for garnish if desired.

Serve the risotto in bowls, garnished with parsley and an extra sprinkle of Parmesan.

Chef’s Note

Use high-quality shrimp and freshly grated Parmesan for the best flavor.

If you prefer a lighter dish, substitute some of the butter with olive oil.

To save time, you can cook the shrimp scampi while the risotto is simmering, but keep an eye on both.

For a burst of freshness, add a handful of chopped cherry tomatoes or spinach to the risotto before serving.
