Ingredients

  • 4 salmon fillets (6 oz each), skin-on or skinless
  • 1/4 cup soy sauce
  • 1/4 cup mirin (Japanese sweet rice wine)
  • 2 tablespoons brown sugar (or honey)
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch (optional, for thickening sauce)
  • Toasted sesame seeds, for garnish
  • Sliced green onions, for garnish
  • Cooked rice, for serving
  • Steamed vegetables, for serving

How to Make Teriyaki Salmon

    Prepare Teriyaki Sauce:

In a small saucepan, combine soy sauce, mirin, brown sugar (or honey), rice vinegar, sesame oil, grated fresh ginger, and minced garlic. Bring the mixture to a simmer over medium heat.

If desired, mix 1 tablespoon of cornstarch with 1 tablespoon of water to create a slurry. Gradually stir the cornstarch slurry into the simmering sauce to thicken. Continue stirring until the sauce thickens slightly, then remove from heat. Set aside.

Marinate the Salmon:

Place salmon fillets in a shallow dish or resealable plastic bag. Pour half of the teriyaki sauce over the salmon fillets, reserving the other half for later. Ensure the salmon fillets are evenly coated in the marinade. Marinate in the refrigerator for at least 30 minutes, up to 2 hours.

Cook the Salmon:

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.

Remove the marinated salmon fillets from the refrigerator and place them on the prepared baking sheet. Discard the marinade used for marinating.

Bake the salmon fillets for 12-15 minutes, depending on the thickness of the fillets, or until the salmon is cooked through and flakes easily with a fork. Optionally, you can broil the salmon for the last 1-2 minutes to caramelize the top.

While the salmon is baking, heat the reserved teriyaki sauce in a small saucepan over low heat until warmed through.

    Serve Teriyaki Salmon:

Transfer the baked salmon fillets to serving plates. Spoon the warmed teriyaki sauce over the salmon fillets, ensuring they are generously coated.

Garnish with toasted sesame seeds and sliced green onions.

Serve with Accompaniments:

Serve teriyaki salmon hot with steamed rice and your choice of steamed vegetables. Drizzle extra teriyaki sauce over the rice if desired.

Chef’s Note

Salmon Preparation: For a richer flavor, you can marinate the salmon for longer, up to 4 hours, in the refrigerator. Ensure the salmon is covered and well-marinated.

Grilling Option: Instead of baking, you can grill the marinated salmon fillets over medium-high heat for about 4-5 minutes per side, basting with the teriyaki sauce.

Teriyaki Sauce Variation: Customize the teriyaki sauce by adding ingredients such as orange juice, chili flakes, or sesame seeds for additional flavor and texture.

Serving Suggestions: Teriyaki salmon pairs well with a side of Asian-inspired slaw or a cucumber salad for a refreshing contrast.
