Ingredients:

For the Pizza Dough:

1 1/2 cups all-purpose flour

1 tsp active dry yeast

1/2 tsp salt

1 tsp sugar

1 tbsp olive oil

1/2 cup warm water (110°F)

1/2 tsp garlic powder (optional)

For the Shrimp Scampi Topping:

1 lb large shrimp, peeled and deveined

3 tbsp olive oil

4 cloves garlic, minced

1/2 tsp red pepper flakes (optional)

2 tbsp lemon juice

1/4 cup dry white wine (or chicken broth)

1 tbsp fresh parsley, chopped (for garnish)

Salt and black pepper, to taste

For the Pizza:

1/2 cup pizza sauce (garlic butter or white sauce recommended)

1 1/2 cups shredded mozzarella cheese

1/4 cup grated Parmesan cheese

Seafood Enchiladas

Salmon Wellington

1 tbsp fresh basil, chopped (for garnish)

Olive oil for brushing

How to Make:

Prepare the Pizza Dough: In a large bowl, combine the flour, yeast, salt, and sugar. Add the warm water and olive oil, mixing until a dough begins to form. Knead the dough on a lightly floured surface for about 5-7 minutes until smooth and elastic. Place the dough in a lightly greased bowl, cover with a damp cloth, and allow it to rise in a warm place for 1-1.5 hours, or until doubled in size.

Prepare the Shrimp Scampi: While the dough is rising, heat olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes (if using) and cook for 1-2 minutes, or until fragrant. Add the shrimp to the skillet, seasoning with salt and pepper. Cook the shrimp for about 2-3 minutes on each side until pink and opaque. Remove the shrimp from the skillet and set aside.

Make the Scampi Sauce: In the same skillet, pour in the white wine (or chicken broth) and lemon juice. Bring the mixture to a simmer, scraping up any bits from the bottom of the skillet. Let it cook for 2-3 minutes to reduce slightly. Once the sauce has thickened, return the shrimp to the skillet and toss them in the sauce for an additional 1-2 minutes, ensuring they’re well-coated. Remove from heat and set aside to cool slightly.

Preheat the Oven: Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat up.

Shape the Pizza Dough: Once the dough has risen, punch it down and roll it out into a 12-inch circle (or your preferred shape) on a floured surface. If using a pizza stone, transfer the dough to a pizza peel or a floured surface. If using a baking sheet, transfer the dough directly to the sheet.

Assemble the Pizza: Brush the dough with a thin layer of olive oil for a crispy crust. Spread the pizza sauce (garlic butter or white sauce) evenly over the dough. Sprinkle the shredded mozzarella cheese over the sauce, followed by the grated Parmesan cheese. Arrange the shrimp in a single layer on top of the cheese.

Bake the Pizza: Transfer the assembled pizza to the preheated pizza stone or baking sheet. Bake for 10-12 minutes, or until the crust is golden and the cheese is bubbly and melted.

Finish and Serve: Once the pizza is done, remove it from the oven and let it cool for a few minutes. Garnish with fresh parsley and basil. Slice and serve hot.

Chef’s Note:

For an extra creamy and rich flavor, try adding a drizzle of Alfredo sauce or a thin layer of cream cheese over the dough before adding the shrimp scampi topping. You can also customize the pizza by adding extra toppings such as spinach, sun-dried tomatoes, or even a few anchovies for added flavor.

If you don’t have white wine, chicken broth works perfectly as a substitute for a more subtle flavor. For a gluten-free version, you can use a gluten-free pizza crust or even a cauliflower crust for a lighter option.

Shrimp scampi pizza is an excellent choice for those who love seafood but want to enjoy it in a fun, accessible way. The garlic butter sauce and perfectly cooked shrimp will make every bite a flavorful experience.
