Shrimp Paella

Ingredients:

For the Paella:

1 lb large shrimp, peeled and deveined

1 1/2 cups Arborio rice or short-grain rice

1 tbsp olive oil

1 small onion, diced

1 bell pepper (red or yellow), diced

2 cloves garlic, minced

1/2 cup diced tomatoes (fresh or canned)

1/2 cup frozen peas

1/4 cup dry white wine (optional)

3 cups chicken or seafood broth

1/2 tsp saffron threads (or turmeric as a substitute)

1 tsp smoked paprika

1/2 tsp ground cumin

Salt and pepper, to taste

1 tbsp fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

For the Seafood Broth:

1 1/2 cups water

1 tbsp olive oil

1 clove garlic, smashed

1 bay leaf

How to Make:

Prepare the Seafood Broth: In a small saucepan, combine 1 1/2 cups water, olive oil, onion, garlic, bay leaf, and peppercorns. Bring the mixture to a simmer, cover, and cook for about 10 minutes to develop the flavors. Once done, strain the broth and set it aside.

Sauté the Vegetables: Heat 1 tablespoon of olive oil in a large paella pan or deep skillet over medium heat. Add the diced onion and bell pepper, cooking for 5-7 minutes, until the vegetables have softened. Add the garlic and cook for an additional 1 minute, stirring frequently to prevent burning.

Cook the Rice: Stir in the Arborio rice, allowing it to toast lightly in the pan for about 2 minutes. This will help the rice absorb the flavors better. Add the diced tomatoes and cook for another minute.

Add the Broth and Spices: Pour in the seafood broth, white wine (if using), saffron threads (or turmeric), smoked paprika, cumin, and a pinch of salt and pepper. Stir to combine. Bring the mixture to a gentle boil, then lower the heat to a simmer. Let the rice cook uncovered for about 15-20 minutes, or until most of the liquid is absorbed and the rice is tender. Stir occasionally, but avoid over-mixing the rice.

Add the Shrimp and Peas: Once the rice is nearly done, scatter the shrimp over the top of the rice along with the frozen peas. Press them gently into the rice, then cover the pan with a lid or foil. Cook for an additional 5-7 minutes, or until the shrimp is pink and cooked through and the rice is tender. The shrimp should be juicy, not overcooked.

Finish and Serve: Remove the pan from the heat and let it rest for a few minutes before serving. Garnish the paella with fresh chopped parsley and lemon wedges for a burst of freshness. Serve immediately.

Paella is a dish that thrives on the freshest ingredients. If you can’t find shrimp, you can also add other seafood like mussels, clams, or even fish fillets. For a smokier flavor, add a touch more smoked paprika, or feel free to incorporate chorizo for an extra kick. If you don’t have a paella pan, a wide skillet or shallow Dutch oven will work just fine. The key to a great paella is allowing the rice to form a golden crust on the bottom, known as “socarrat.” To achieve this, don’t stir the rice during the final cooking stages, and allow the liquid to cook off at the bottom.
